Tasting Notes

It has a natural rind that is slightly chewy and rusty brown in colour. The texture is firm and dense and slightly granular with an interior the colour of pale butter. Flavours are sweet and complex and long lasting. A gentle acidic tang is complemented with hints of pineapple and caramel. Is also often compared to the Spanish cheese Manchego.

Made in West Midlands (Berkswell) at Ram Hall Farm using unpasteurised sheep/ ewes milk. Matured for up to 6 months and is not suitable for vegetarians
