Tasting Notes

The textures are enjoyably complex, having a firm lactic core, a creamy layer under the rind (known as the breakdown) and moist throughout. It has a bright lemony taste, emphasised by the maturation process this allows a natural rind to develop. Adding depth to the taste and textures running through the cheese.

Additional Information

Made in Somerset by Trethowans Dairy using raw unpasteurised cows milk. Matured for 2-3 months and is not suitable for vegetarians
